Strawberry Pancakes

Pancakes: serves 2 people, makes 6-8 pancakes

 

Ingredients:

2 eggs

½ cup milk (soy is good too)

1 tsp brown/white sugar

2 tbsp oil

1 cup gluten-free flour

1 tsp baking powder

¾ blueberries

2 strawberries

 

Sauce ingredients:

1 banana

⅔ cup cream

½ tsp sugar

1 tsp maple

Pancake Directions:

1.  Beat 2 eggs with milk and sugar for 1 minute

2.  Add in the oil and mix

3.  Sift flour and baking powder into mixture and add blueberries

4.  Whisk until lumps disappear and let rest for 4.5 minutes

5.  Heat up a pan on medium heat

6.  Pour batter mixture into even circles in the pan

7.  When bubbles appear and pop, turn over

 

Sauce

1.  Pour all ingredients into blender and mix

2.  Should be a thick consistency. If too thick add 1 tsp of milk until soon
